Before we start this course, we will first look at what will be covered during the training. The course is divided into categories and in each category, there are a number of videos. You can pause and watch again any video of the course. We update our courses regularly and you will be able to see the replacement and new videos as they are released.

You work through the course videos in order and we'll now give you a summary of what the course will cover:

First, we will look at the relevant regulations and the allergens Regulations. Then in the Bacteriology and food poisoning section, we look at bacteria and its effects, how we control bacteria, food poisoning and allergic reactions, types of infections, poisons and food poisoning.

In the food contamination and personal hygiene section, we look at direct and indirect cross-contamination, preventing contamination’s, bars and restaurants, restaurant workers, protective clothing, personal responsibilities, employers responsibilities and exclusion from work.

In the final section food storage, we look at the storage of food, use by dates, best before dates, effective stock Control, heating, refrigeration and freezing.
